ounces Dillon’s Unfiltered Gin 22
- 3/4
ounce Pineapple Pea Shoot Cordial {see recipe below}
- 2
dashed Dillon’s Lime Bitters {optional for added brightness}
- 3/4
ounce fresh lime juice
Pineapple wedge & lime wheel, for garnish
GoodLeaf Sweet Pea Shoots, for garnish
How to prepare
- Step 1
- Make the pineapple & pea shoot cordial {recipe below}
- Step 2
- Add the gin, cordial, bitters, fresh lime juice and some good quality ice to a set of mixing tins and shake for 6-8 seconds.
- Step 3
- Strain the cocktail into a rocks glass with fresh ice, garnish and serve.
Pineapple Pea Shoot Cordial Recipe
- 50g GoodLeaf Sweet Pea Shoots
- 200g Sugar
- 100g Pineapple Juice
- The Juice and Zest of 1 Lime (30g)
- 1g Salt
- 3g Citric Acid
- 70g Water
*Add all ingredients to a blender and blend until sugar is dissolved. Strain through cheese cloth and set aside.
